Les Crepes de Meme {Recipe}

Tomorrow is Shrove Tuesday or 'Fat Tuesday' (translation from the French), and it may be a good time to share the best pancake recipe ever - that of my Grandmother - totally unbiased opinion then. To be fair, she was from Brittany the county of pancakes, and everyone who has eaten one of her pancakes loved them! 

I am posting the recipe today, as you should leave the pancake mix overnight in the fridge. There are no fancy ingredients in the recipe so you should be able to make the mix without a trip to the supermarket. 


To make the mix (for 4 skinny people or 2 greedy people - like Mr MiH and I)
  • 250g of all purpose flour
  • 1/2 teaspoon of salt
  • 2 tablespoons of sugar
  • 2 tablespoons of sunflower oil
  • 1/4l of milk
  • 1/4l of water
  • 3 eggs
How to make the mix?


1. In a large mixing bowl, whisk together the flour, sugar, salt, oil and milk. Make sure you work the mix properly. 
2. Whisk the eggs separately and add to the mix.
3.Add the water a little by little. 
4. Leave to rest overnight for best results (or just a couple of hours)

You cook them in butter... Just make sure that your pan is hot enough.

PS: We use the same mix for savoury (gruyere, ham and egg) and sweet (sugar or maple syrup) pancakes

  1. Oh you've made me hungry now. I think I will try this and the girls can have them for breakfast as they have a friend staying the night. I love the idea of making the mix ahead of time and leaving it in the fridge. Do you need to give it a good stir before using if it has sat all night?

  2. Oh I'm starving too - they look soooo good. We love pancakes in this house. Must make some tomorrow. We add melted butter to ours but I guess the oil may be healthier!

  7. Will have to try this. Our Norwegian pankakes are similar but don't have oil and sugar in them. So these French ones are probably even yummier:)
