I am posting the recipe today, as you should leave the pancake mix overnight in the fridge. There are no fancy ingredients in the recipe so you should be able to make the mix without a trip to the supermarket.
To make the mix (for 4 skinny people or 2 greedy people - like Mr MiH and I)
- 250g of all purpose flour
- 1/2 teaspoon of salt
- 2 tablespoons of sugar
- 2 tablespoons of sunflower oil
- 1/4l of milk
- 1/4l of water
- 3 eggs
How to make the mix?
1. In a large mixing bowl, whisk
together the flour, sugar, salt, oil and milk. Make sure you work the mix properly.
2. Whisk the eggs separately and add to the mix.
3.Add the water a little by little.
4. Leave to rest overnight for best results (or just a couple of hours)
