Nutella Muffins {Recipe}

I do not usually do muffins - the ones I made have been quite dry in the past, and nothing like the ones you can get on the high street. However I saw this recipe at Waitrose, and thought it sounded similar to the high-fibre muffin you can get from Starbucks (it used to be my treat on Mondays on my way to work) - but with the addition of nutella, I did not think it could go wrong! And I was not disappointed - these were a hit! I am making a second batch tomorrow. 


To make these you will need (for 12)
  • 300g self-raising flour
  • 1 tsp bicabornate of soda
  • 100g light brown soft sugar
  • 50 g porridge oats
  • 2 ripe bananas
  • 284 ml carton buttermilk
  • 75g of unsalted butter
  • 2 medium eggs, beaten
  • 100g of Nutella (or more depending how much Nutella you want inside)


How to make them?


1. Preheat the oven to 180 C, gas mark 4, in a large bowl, mix together the flour, bicarbonate of soda, sugar and oats
2. Using a fork, mash the bananas until pureed then mix in the buttermilk, butter and eggs. Add the banana mixture to the flour bowl and stir to mix - will look lumpy
3. Divide half of the mixture between 12 paper muffin cases then drop a teaspoon (or two or three...) of Nutella into each one. Top with the remaining muffin mixture then bake for 20 minutes until risen and golden. 

On the pictures you will see I added some oats on the top - purely for presentation. I actually think they made the muffins drier. I will probably pass next time. 



There are great warm. Unless you have a few people around, you can freeze them without any problem, and defrost them just as you are going to offer them (I do it over 10 minutes, in 3 parts, at the lowest setting on our microwave). The Nutella is then melted... Amazing!

  2. Mmm Nutella, this recipe sounds amazing. I also like freezing breads and cakes. Many times I double the recipe and freeze half.

  3. These look yummy! Nutella rocks! My sil showed me how to put some Nutella and a slice of banana in a won ton wrapper, seal the triangle with water or egg, and then pan fry the triangles on both sides.

  4. Oh yum these look absolutely delicious and I love nutella. I'd never get around to freezing them though, they'll be all gone before then :P! xx
