Belgian Peanut Butter Waffles | A recipe

I spotted this recipe on Pinterest first, and was sent to the Beautiful Mess recipe. This is clearly another pregnancy thing - I am not a fan of peanut butter usually, but the waffle idea of it really appealed to me. And it was the best thing I had tasted (or that the baby tasted?). Actually Mr MiH really liked them too, so maybe not just a pregnancy thing after all. 



I followed exactly the same recipe... So.. 

You will need: 

2 egg yolks
3 egg whites
3/4 cup white flour
1/4 cup + 2 tablespoons sugar
3/4 teaspoon baking powder
pinch of salt
1/4 cup + 2 tablespoons milk
1/2 tablespoon vanilla extract
3 tablespoons butter, melted
1/4 cup creamy peanut butter


Separate the eggs and discard one of the yolks . 

In a large bowl sift together the flour, sugar, baking powder, and salt. Add in the egg yolks, milk, and melted (and slightly cooled) butter. Stir together. Add the peanut butter and stir until creamy.

In the bowl containing the egg whites, whisk the eggs until they become foamy/frothy. Gently fold these into the batter until just combined.

Pour about 1/3 cup of batter into the ready waffle iron and cook according to the directions of your waffle maker.



In case you are wondering, my waffle maker is also a croque-monsieur maker, I know so French of me - here is the one I have, in case you are interested. It is a great kit of equipment, although not one I get out often unfortunately. And you can clean it quite easily.
